Orange Cake
My dear readers!
I'm back! First of all, I would like to explain my long absence on the blog. The reason for it is the fact that my daughter got married! Whilst this event evoked so many joyful and wonderful emotions in me and our whole family, it also involved a whole lot of preparation and organization, as all weddings do! The wedding was in France, and just to sum up: it was beautiful and very romantic!
But now all the wedding hassles are behind us, I can finally focus on my blog again!
Orange cake
I find that cakes and pastries with fresh oranges have a nice citric, fresh and juicy taste. This cake is well suited for birthday or dinner parties since it looks quite festive! But it doesn't take much effort and skills to prepare, as all the recipes that I share on this blog.

Condensed Milk Chocolate Cake
My family loves this chocolate cake with condensed milk! I've been baking it for over 20 years now. It's not complicated at all to make and it's very tasty. In my opinion it resembles the famous Austrian Sachertorte a little, they're both very chocolaty. I have to admit that this cake is not very light, but when it tastes so heavenly, what does it matter :)

Easy Pineapple Upside-Down Cake
Last weekend I decided to try out this very easy and quick recipe of a pineapple upside-down cake. It turned out delicious, and very nice looking as well!

Carrot Cake with Crushed Raisins, Walnuts and Pineapple
This cake is a very interesting variation to the traditional carrot cake. It involves crushed pineapple, raisins and walnuts. The delicious frosting is made from cream cheese and vanilla/lemon flavored quark (cottage cheese). The recipe was adapted from valio.fi.

Tosca cake (Toskakku)
On the weekend I baked a cake, called Tosca cake (Toskakakku). It’s very popular cake in this part of the world. I’m not exactly sure whether this cake is originally Finnish or Swedish, so let’s assume that it’s Nordic. This wonderful cake has a soft base with a crusty and sweet almond topping. Like all the recipes in this blog, it’s not complicated to make at all, yet it looks very interesting and tastes delicious.

Chocolate Fondant
You’re in a bad mood? Nothing like a good old
French classic chocolate dessert to cheer you up! I know, I’ve been on a roll
with dessert recipes lately, but who can resist this Fondant au chocolat? I
find it amazing that when you barely touch the surface of the little cake with
a spoon, delicious chocolate lava pours out. Imagine my surprise when I found
out that it’s literally one of the easiest desserts to make. It literally takes
no more than 15 minutes in total. And out of those 15 minutes only 8-10 minutes
of baking time! Isn’t that some sort of a baking record? Don’t forget to serve
it with a scoop of ice cream. Really, melted gooey chocolate with some vanilla
ice cream… The best thing ever!
