After
trying banana bread, me and my family fell in love with baking that includes
bananas. This banana muffin recipe is simply amazing: it’s not complicated at
all, yet your muffins will come out so delicious, tender and moist. Better yet,
they will have a rich banana taste to them. This is a great recipe for those times when you have, for example unexpected guests coming over, and you happen to have some ripe bananas. Thank you Hidden Ponies for sharing

Ingredients (10-12 muffins):
1 egg
3 ripe bananas
1/2 cup butter or
margarine, melted
1 1/2 cups all-purpose
flour
1/2 white sugar
1 tsp baking powder
1 tsp baking soda (I
left it out)
1/2 tsp salt
1 tsp cinnamon
For the oatmeal
topping:
2 tbsp butter, melted
1/4 cup brown sugar
1 tbsp all-purpose
flour
1/3 cup quick cooking
oats
Directions:
- Preheat the oven to
400 degrees F (205 degrees C).
- In a medium bowl,
mash the bananas using a fork. Add the egg and melted butter. Whisk until
thoroughly blended.
- In another bowl
combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Add to
banana mixture and stir just until moistened.
- Place the batter
using a spoon into a paper-lined muffin pan. Fill the muffin cups almost to the
brim. In a small bowl, combine all the topping ingredients, mix together, and
sprinkle evenly over the muffins.
- Bake for 17-20 minutes or until tops are browned and toothpick comes out clean.
