Banana Muffins with Oatmeal Topping



After trying banana bread, me and my family fell in love with baking that includes bananas. This banana muffin recipe is simply amazing: it’s not complicated at all, yet your muffins will come out so delicious, tender and moist. Better yet, they will have a rich banana taste to them. This is a great recipe for those times when you have, for example unexpected guests coming over, and you happen to have some ripe bananas. Thank you Hidden Ponies for sharing this great recipe!


Ingredients (10-12 muffins):

1 egg
3 ripe bananas
1/2 cup butter or margarine, melted
1 1/2 cups all-purpose flour
1/2 white sugar
1 tsp baking powder
1 tsp baking soda (I left it out)
1/2 tsp salt
1 tsp cinnamon

For the oatmeal topping:

2 tbsp butter, melted
1/4 cup brown sugar
1 tbsp all-purpose flour
1/3 cup quick cooking oats

Directions: 
  1. Preheat the oven to 400 degrees F (205 degrees C). 
  2. In a medium bowl, mash the bananas using a fork. Add the egg and melted butter. Whisk until thoroughly blended. 
  3. In another bowl combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Add to banana mixture and stir just until moistened. 
  4. Place the batter using a spoon into a paper-lined muffin pan. Fill the muffin cups almost to the brim. In a small bowl, combine all the topping ingredients, mix together, and sprinkle evenly over the muffins.
  5. Bake for 17-20 minutes or until tops are browned and toothpick comes out clean.
