Fresh Clementine Chicken Salad



I decided to share this very easy, healthy and low-calorie salad recipe on the blog. It’s perfect for those times when you feel like something special, but you don’t have much time to spend on cooking, for example on the weekdays. I found this recipe on a Finnish website pirkka.fi

Ingredients (for 4 portions, less than 30 minutes to prepare):

10.5 oz (300 g) skinless boneless chicken breasts marinated in lime juice
1 tablespoon any cooking oil or butter
3.5 oz (100 g) frisee lettuce
1/2 (about 4.5 oz or 130 g) cucumber
3 (12.3 oz or 350 g) clementines
1 (about 7 oz or 200 g) ripe avocado
4.4 oz (125 g) blue cheese

Dressing:

1 tbsp light balsamic vinegar
2 tbsp clementine juice
2 tbsp canola or sunflower oil
1/4 tsp salt
black pepper to taste

Directions:
  1. Wash and rip the salad into smaller pieces. Place it in a large bowl. Cut the cucumber, peeled clementines and avocado in cubes and add them in the salad.  
  2. Wash the chicken breasts in cold water and dry well using paper towels. Cut the chicken in cubes. In a large skillet over medium heat, sauté the chicken in cooking oil or butter until golden on both sides, salt and pepper to taste. Cut the cooked chicken into cubes, cool and place on top of the salad mix.
  3. Combine and mix the dressing ingredients. Pour on the salad. Sprinkle some crumbled blue cheese on top. Serve with fresh bread.
