These
baked potatoes stuffed with mushrooms and cheese are delicious and
don't require much effort to prepare. It's perfect for a weekend dinner!

- 4 large potatoes
- 7.1 oz (200 g) common mushrooms, chopped
- 4.4 oz (125 g) hard cheese (for example, Emmental), grated
- 1.8 oz (50 g) green onion, chopped
- 6 tbsp (80 g) butter, melted
Directions:
- Preheat the oven 390 degrees F (200 degrees C).
- Wash the potatoes and them dry using paper towels. Pierce each potato with a fork.
- Bake for 1 hour and 15 minutes.
- In medium skillet, fry the mushrooms in some cooking oil.
- Take the ready baked potatoes from the oven and cut in halves. Using a teaspoon take out some of the potato (place it in a small bowl and set it aside), in order to make a small deepening for the filling. Butter the potato halves from the inside and outside.
- In a small bowl, stir together fried mushrooms, green onions, butter, and the extracted potato 'pulp'. Fill the potato halves with the filling. Sprinkle some grated cheese on top and bake for 5 minutes until the top is golden.
