Eggplant salad with tomatoes and sweet pepper

This salad is very simple and very tasty. The main ingredient - fried eggplant. The rest of the vegetables will be fresh, so the salad will turn out juicy. A small amount of vinegar or lemon juice and garlic adds more taste.


Ingredients:
  • 3 small eggplants
  • 2 tomatoes
  • 2 sweet peppers
  • 1 onion
  • 1 tbsp. vinegar or lemon juice
  • 2-3 cloves of garlic
  • 0.5 teaspoon of sugar
  • salt, pepper
  • frying oil, herbs

Preparation:
  1. You'll need very little time. Wash the eggplants, dry them, peel them, and cut them into long strips. Sprinkle with salt and let them sit for 30 minutes.
  2. Drain the juice and squeeze the eggplants well. Heat a frying pan and fry the eggplants in vegetable oil.
  3. Halve the tomatoes and slice them into half rings. Cut the bell pepper into strips. Add the onion, thinly sliced ​​into half rings. Then add the fried eggplants. 
  4. Add sugar, salt, pepper, and chopped herbs. 
  5. Mix everything carefully and transfer to a salad bowl.
