This salad is very simple and very tasty. The main ingredient - fried eggplant. The rest of the vegetables will be fresh, so the salad will turn out juicy. A small amount of vinegar or lemon juice and garlic adds more taste.
Ingredients:
- 3 small eggplants
- 2 tomatoes
- 2 sweet peppers
- 1 onion
- 1 tbsp. vinegar or lemon juice
- 2-3 cloves of garlic
- 0.5 teaspoon of sugar
- salt, pepper
- frying oil, herbs
Preparation:
- You'll need very little time. Wash the eggplants, dry them, peel them, and cut them into long strips. Sprinkle with salt and let them sit for 30 minutes.
- Drain the juice and squeeze the eggplants well. Heat a frying pan and fry the eggplants in vegetable oil.
- Halve the tomatoes and slice them into half rings. Cut the bell pepper into strips. Add the onion, thinly sliced into half rings. Then add the fried eggplants.
- Add sugar, salt, pepper, and chopped herbs.
- Mix everything carefully and transfer to a salad bowl.
