Roasted Turkey Breast

I love turkey meat, it's light and full of protein. Still I was always scared to bake it since I thought it would turn out dry. I found this recipe, and decided to try it out, and to my surprise the meat turned out very tender and not dry at all. I recommend everyone to try this recipe out especially since it's very simple. 



Ingredients:

2.2 lbs (1 kg) skinless boneless turkey breasts
3-4 tbsp salt for the marinade
6-7 garlic cloves
Spices to taste (black ground pepper, basil, coriander, winter savory)
1 tsp olive oil

Directions:
  1. Preheat the oven to 480 degrees F (250 degrees C). Wash the turkey breast.
  2. Mix salt and water together and place the turkey in the salty water. Leave it in the fridge to marinade for about 2 hours (I left for 4 hours). 
  3. Take out the turkey and dry it with paper towels.
  4. Peel and slice the garlic cloves. Makes little cuts in the turkey meat and insert the garlic slices.
  5. In a small bowl combine the spices, add olive oil and rub the marinated turkey with the mixture.
  6. Place the turkey in a baking pan lined with folio. Slightly cover the turkey with some folio as well.
  7. Bake for about 20 minutes.
  8. Turn off the oven and leave the turkey in there for another 2 hours. Do not open the oven until the 2 hours have passed.
