The name is a little funny, especially since this pastry literally
has nothing to do with potatoes. I have no clue why it was named like
that, maybe it's the shape... However, what I love the most about this pastry is that
it's a raw dessert, as it involves no baking.
No-bake chocolate 'potato' pastry
Ingredients (8-10 serving):
- 8.8 oz (250 g) graham crackers, crushed
- 9 tbsp (125 g) butter, softened
- 3/4 cup + 1 tsp (100 g) powdered sugar
- 3 tbsp cocoa powder
- (1 dl) whipping cream (at least 33% fat)
- 1 tbsp cognac or rum
- coconut flakes, white chocolate, maraschino cherries for decorating
Directions:
- In a large bowl, combine powdered sugar and cocoa powder. Add softened butter and beat until the mixture is smooth. Note: don't replace powdered sugar with regular sugar, the mixture won't turn out smooth. Add whipping cream gradually, while continuing to beat.
- Incorporate crushed graham crackers and cognac into the mixture. Mix well.
- With your hands shape the pastry into a potato-like forms and decorate. I used coconut flakes, white chocolate and maraschino cherries.
- Place the pastries in the fridge for 1-2 hours. Enjoy them with a cup of coffee or tea!
Note:
I didn't have any graham crackers at home at the time when I decided to make the pastries, so I made a replacement for them myself. Here's the recipe, if you also want to make it yourself.
Ingredients:
- 3 eggs
- (90 g) sugar
- (75 g) all-purpose flour
- 1 tbsp corn starch
- 1/2 tsp baking powder or baking soda
Directions:
- Preheat the oven to 395 degrees F (200 degrees C).
- In a large bowl, beat the eggs until soft peaks.
- In a separate bowl combine flour with corn starch and baking powder/soda. Carefully combine the wet and dry ingredients and mix well.
- Pour the batter in baking tray lined with parchment paper.
- Bake for 12-20 minutes. Cool it down and crush in a food processor or a blender.
