Sandwich Cake

In Finland sandwich cakes are very popular and they're usually served on some special occasions or events. It's probably because this savory dish is very delicious, goes well with a great deal of other foods, and serves as a beautiful decoration on the table. 

I made my cake with smoked turkey but there are endless variations of the fillings that you can make for this cake. For example, fish, vegetable, ham, and chicken all work really well also. The recipe was adapted from here.




Ingredients (10-12 servings):

Base:

10 large toast bread slices
about 1/3 cup + 2 tbsp (1 dl) milk

Filling:

10.6 oz (300 g) smoked ham or turkey slices
3-4 (5.3 oz or 150 g) pickles, chopped
7.1 oz (200 g) cream cheese
1 bell pepper, finely chopped
3 tbsp (1/2 dl) fresh parsley, chopped

Topping:

7.1 oz (200 g) cream cheese
cherry tomatoes, halved
parsley, chopped
cucumber, sliced

Directions:
  1. Blend the smoked ham/turkey slices and pickles in a food processor or a blender. Add half of the cream cheese; mix well. Divide the meat filling in three parts. 
  2. Mix together half of the bell pepper, parsley, and the remaining cream cheese.
  3. Slightly wet all the bread slices with milk using a pastry brush. Place two bread slices closely together in the middle of a large piece of parchment paper lined on the table; spread 1/3 of the meat filling on top. Sprinkle the remaining bell pepper pieces on the meat filling. 
  4. Place another two bread slices on top and spread another 1/3 of the meat filling.  
  5. Place another two bread slices on top and spread all the bell pepper filling. 
  6. Place another two bread slices on top and spread the remaining meat filling; place the remaining four halves of the bread slices on top.
  7. Wrap the cake with parchment paper, put in a plastic bag and let it sit in the refrigerator for one night.
  8. Trim the edges of the cake if needed, in order to create a more even appearance. Frost the cake with cream cheese and decorate it with some cherry tomatoes, cucumber slices, and parsley. You can also use olives, thin ham slices and dill for decorating.
