Traditional Finnish Pannukakku

This traditional Finnish dessert is very simple yet delicious. Basically, the dough is the same as you use in pancakes, the only difference is that instead of cooking it in a frying pan, you bake it in the oven. This dessert is perfect to serve with some coffee. However, you can also make it into a main dish by adding some chopped vegetables, bacon, ham… Basically anything you want, just use your imagination. For example, you can use some left-over chicken and carrots from last night. Despite the variations of this recipe, it always turns out great and yummy!

Ingredients:

4 eggs
4 cups milk
2 1/4 cups all-purpose flour
1 tsp salt
1 tbsp sugar
1/2 cup melted butter or margarine

Directions:
  1. Preheat the oven to 480 degrees F (250 degrees C). Beat the eggs and add milk. Add all the dry ingredients and melted butter or margarine while continuing to mix well with a hand mixer or a whisk. Let the mixture set for 30 minutes. 
  2. On a large baking pan sprinkle a little bit of water and line it with parchment paper. This way the parchment paper will stay in place better.
  3. Bake the pancake in the oven first for about 15 minutes. Lower the temperature to 440 degrees F (225 degrees C) and bake for another 13 minutes or until the top and the bottom of the pancake turn golden brown. Serve with whipped cream, ice cream, jam or fresh berries.
You can make the baked pancake into a savory meal by adding fried bacon, ham and grated carrots: In this case you should leave out the sugar.
