Blondies

I love brownies and soon will most likely post a recipe of one. But in the meantime, I decided to share this blondie recipe. This recipe is perfect if you're in the mood for something chocolaty but you're out of dark or milk chocolate, and, of course, for all the white chocolate lovers out there!

Ingredients (8 servings):
  • 8 tbsp (113 grams) butter, melted
  • 1 cup (2 1/3 dl) brown sugar
  • 1 large egg
  • 1 tsp vanilla or 1/2 teaspoon almond extract
  • pinch of salt
  • 1 cup (2 1/3 dl) all-purpose flour
  • 1/2 to 1 cup (1 to 2 1/3 dl) white chocolate chips
Directions:
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Butter an 8×8-inch (20x20 cm) pan.
  3. Mix melted butter with brown sugar – beat until smooth. Beat in egg and then vanilla.
  4. Add salt, stir in flour. Mix in white chocolate chips or any other additions (below).
  5. Pour into prepared pan and bake for 20-25 minutes, or until set in the middle. Cool on rack before cutting them.
Further additions, use one or a combination of:
  • 1/2 to 1 cup (1 to 2 1/3 dl) chopped nuts, toasting them first for even better flavor
  • 1/2 tsp mint extract in addition to or in place of the vanilla
  • 1/2 cup (1 dl) mashed bananas
  • 1/4 cup (1/2 dl) bourbon, scotch or other whiskey; increase the flour by one tablespoon
  • 2 tbsp of espresso powder with the vanilla
  • Stir 1/2 cup (1 dl) dried fruit, especially dried cherries, into the prepared batter
