Summer is coming soon and this calls, of course for summer recipes! My first summer recipe on the blog will be this wonderful homemade peach lemonade. What can be better than a nice, cool, sweet drink to enjoy on a hot summer afternoon? Better yet, it's homemade: no store bought lemonade can beat that, since there's no added unhealthy ingredients! A little note: you can also be make it with blueberries, raspberries, blackberries, etc. The recipe was adapted from a wonderful blog Divas Can Cook.
Fresh Homemade Peach Lemonade

Ingredients (5 servings):
- 3 cups (7 dl) fresh peaches, diced (about 6 peaches)
- zest of 3 lemons
- 1 1/2 cups (3 1/2 dl) sugar
- 6 cups (14 dl) cold water or sparkling water, divided
- 1 cup (2. 1/2 dl) fresh lemon juice (juice of about 7 lemons)
- garnish (peach slices, lemon slices, mint)
Directions:
- In a large saucepan over medium heat, add diced peaches, lemon zest, sugar and 2 cups (4 2/3 dl) of water. Stir to dissolve sugar and let mixture simmer. (do not boil, reduce heat if needed)
- When peaches are very soft, mash them with a potato masher or fork to break them up. Let mixture simmer until it thickens slightly. Remove from heat and let cool.
- Strain the peach syrup mixture into a bowl and discard the solids. Add the lemon juice to the peach mixture.
- Pour into a pitcher along with 4 cups of water or sparkling water. Refrigerate until cold if desired.
- Fill glasses with ice. Fill with peach lemonade. Garnish with fresh peach slices, fresh lemon slices and mint. Serve immediately.
