Caramelized red onion goes really well with bacon/ham and and blue cheese. The dish is very quick and easy to prepare, perfect for week nights, but also for dinner parties!
Ingredients (4 portions):
- 11.3 oz (320 g) spaghetti
- 1/5-1/2 cup (1/2-1 dl) water (where the spaghetti was cooked)
- 2.8 oz (80 g) bacon or ham
- 2 red onions, sliced
- 2 tbsp butter
- 3 tbsp balsam vinegar
- 1 tsp sugar
- 6 oz (170 g) blue cheese
- pepper to taste
- Cook the spaghetti as indicated on the package. Drain the cooked spaghetti but keep about 1/5-1/2 cup of water. Set aside.
- In a saucepan, slightly brown the bacon or ham. Place the ham in a bowl and set aside.
- In the same saucepan, add the butter and sliced onions. Fry under the cover for 15 minutes or until the onions turn translucent.
- Add the sugar to the onions and lower the heat to medium. Fry for 10 minutes while constantly mixing. Add balsamic vinegar. Mix well.
- In a large bowl, mix the spaghetti with water, onions and bacon/ham. Sprinkle some blue cheese on top and serve immediately.

I have tasted this one originally cooked by Rosetta! I have to say that after Carbonara, spaghetti with red onion and blue cheese is my favorite pasta! I will certainly make it for Kostia! Thanks for a great recipe!
