Spaghetti with red onion and blue cheese


Caramelized red onion goes really well with bacon/ham and and blue cheese. The dish is very quick and easy to prepare, perfect for week nights, but also for dinner parties!

Ingredients (4 portions):  
  • 11.3 oz (320 g) spaghetti
  • 1/5-1/2 cup (1/2-1 dl) water (where the spaghetti was cooked)
  • 2.8 oz (80 g) bacon or ham
  • 2 red onions, sliced 
  • 2 tbsp butter
  • 3 tbsp balsam vinegar
  • 1 tsp sugar
  • 6 oz (170 g) blue cheese
  • pepper to taste
Directions: 
  1. Cook the spaghetti as indicated on the package. Drain the cooked spaghetti but keep about 1/5-1/2 cup of water. Set aside.
  2. In a saucepan, slightly brown the bacon or ham. Place the ham in a bowl and set aside. 
  3. In the same saucepan, add the butter and sliced onions. Fry under the cover for 15 minutes or until the onions turn translucent.  
  4. Add the sugar to the onions and lower the heat to medium. Fry for 10 minutes while constantly mixing. Add balsamic vinegar. Mix well. 
  5. In a large bowl, mix the spaghetti with water, onions and bacon/ham. Sprinkle some blue cheese on top and serve immediately.

  1. I have tasted this one originally cooked by Rosetta! I have to say that after Carbonara, spaghetti with red onion and blue cheese is my favorite pasta! I will certainly make it for Kostia! Thanks for a great recipe!
